Microwave chocolate cake

Cake Ingredients:

  • 250ml Raising flour
  • 160ml XyloSweet
  • A pinch of salt
  • 250ml hot water
  • 60ml olive oil (light)
  • 2 eggs
  • 45ml cocoa
  • 5 ml vanilla essence

Icing Ingredients:

  • 200g Carob
  • 75ml plain yoghurt
  • 50g chopped Pecan nuts
  • grated rind of orange

 

Method:

  • Spray microwave cake pan with Spray & Cook
  • Mix flour, salt and XyloSweet
  • Beat eggs, hot water, vanilla and cocoa together
  • Slowly add liquid to the flour and mix
  • Pour into baking dish
  • Bake on high for 7 minutes
  • Let it cool down before turning the cake onto a plate.

Icing

  • Melt carob over boiling water
  • Warm yoghurt lightly in microwave for a few seconds
  • Mix orange rind and yoghurt with carob and drip over cake
  • Decorate with chopped nuts

Cut into 12 even slices, and each slice equals roughly 5 GL
