XyloSweet Banana Loaf
(Adapted from a recipe by Marj Atkins)
- 180g XyloSweet
- 85g Butter
- 2 Eggs
- 320g Flour
- 2 tsp Baking Powder
- 1/4 tsp Bicarbonate of Soda
- 1/2 tsp Salt
- 1 cup of mashed banana
- 1 tsp Vanilla Essence
Cream butter and XyloSweet until light and fluffy. Beat in the eggs one at a time. Introduce mashed banana, combining thoroughly. Sift together the dry ingredients. Stir and blend well into mixture. Stir in vanilla. Preheat oven to approximately 170 degrees C. Bake for 1 hour. After cooling, keep in airtight tin. Best after 2 days.
